What's the difference (if any) between a Busa
regular cut trans and the turbo or pro street?

Ive wondered this too. I know a "race" cut tranny has dogs cut off too allow for better air shifting, but it wrecks in for regular street use. This question though...not sure.

They dont shift faster they just cut the dog teeth so that the lock together and cant kick out.

I was thinking more about nitrous cut versus race cut versus undercut.

race cut is just the standard cut.  It corrects the factory defect of the bad second gear.  This can be done to just the second gear or all the gears.  Some bikes have all the gears done from the factory.  Nitrous cut fixes the issue of the trans not shifting when spraying big shots.  Prostreet cut is the closest you can get to an auto without actually having an auto.  It eliminates 2 of the 4 dogs all together. It uses almost no killtime and shifts quicker.
