How are motorcycle tires shaved?

What's the process, is some sort of cutting tool used to remove rubber?

I'm not planning on doing this, I'm just curious as to how things are done.

Yes, it is a rotary cutter (looks like a pizza cutter) applied to the tire at an angle to the direction of tire rotation.

I watched one being shaved when I went and picked mine up a few days ago.

It was saddening to see all that wonderful rubber coming off the tire without the fun associated with tearing it off in the twisties or in a burnout.
